Responsibilities:
- Supervision: Oversee the stewarding team, including dishwashers and cleaning staff, ensuring they follow proper procedures and maintain a high level of cleanliness.
- Equipment Maintenance: Supervise the cleaning and maintenance of all kitchen equipment, ensuring it is in good working condition. Report any malfunction or damage for prompt resolution.
- Inventory Control: Monitor and manage inventory of cleaning supplies, ensuring an adequate stock is maintained. Place orders for supplies as needed, taking budgetary constraints into consideration.
- Waste Management: Implement effective waste disposal procedures and recycling initiatives. Ensure compliance with environmental regulations and company policies.
- Banquet Support: Coordinate with banquet staff to ensure timely setup and breakdown of event spaces, maintaining cleanliness and organization during and after events.
- Hygiene Standards: Enforce strict hygiene and sanitation standards in all areas, including kitchens, dining rooms, and restrooms. Conduct regular inspections to identify and address any cleanliness issues.
- Training and Development: Train new stewards on proper cleaning procedures, equipment usage, and safety protocols. Provide ongoing training to ensure the team is well-equipped to maintain cleanliness standards.
- Customer Management: Oversee the customer management aspect, ensuring guests are welcomed warmly and their needs are addressed promptly. Collaborate with service staff to enhance the overall guest experience.
- Order Management: Work closely with kitchen staff and service teams to manage dishware and equipment flow between the kitchen and dining areas, ensuring efficient order management during peak hours and events.
- Shift Coordination: Coordinate stewarding schedules to ensure adequate coverage during peak hours and events. Assist in managing breaks and shift rotations for the stewarding team.
Skills & Experience:
Proven experience as a Senior Steward or in a similar supervisory role in a fine dining restaurant or banquet setting.
Strong leadership and organizational skills.
Knowledge of cleaning procedures, equipment, and chemicals.
Ability to lift and move heavy items as needed.
Excellent communication and interpersonal skills.
Understanding of health and safety regulations related to kitchen and dining area cleanliness.
Flexibility to work evenings, weekends, and holidays.
Education
Bachelor’s degree is preferred, but a secondary school certification or equivalent is considered.
