Organization: The Organisation Harley’s Fine Baking (https://www.harleys.com/), is a European style patisserie (premium cake selling company) created by an IIM professor to disrupt the cake and coffee market, established to spread bonafide taste of the streets of Manhattan across the world. Brought into the world from a love for baking, the desire to create a meeting place that serves delicious food with a warm rustic environment. The Organization offers a full scope of Breads, morning merchandise, cakes, baked and savoury goods. Currently the team size is of about 200 people with more than 15 outlets across Hyderabad, along with a plan of opening 100 new outlets across Mumbai, Goa, Vijayawada, Bangalore, Chennai scaling up to 1000 people over the next year.
Designation: Chef de Partie (Pastry Cuisine) - Premium Cake & Café Lounge
Qualification: Diploma/Degree in Hotel Management, Culinary Arts, or specialized certification in Baking & Pastry..
Experience: Minimum 2+ years as a Pastry CDP (Chef de Partie) in hotels, premium bakeries, or fine dining establishments.
Job Profile: As a CDP (Pastry Chef) at Harley’s Fine Baking, you will be responsible for managing the pastry section, supervising junior chefs, and ensuring consistent quality and presentation of premium cakes, pastries, and desserts. You will collaborate with the Head Chef to innovate new recipes while maintaining production standards, hygiene, and timely delivery for retail and customized orders.
Responsibilities
- Oversee daily pastry production and ensure consistency in taste, texture, and presentation.
- Supervise and train commis chefs and other pastry staff.
- Ensure adherence to food safety, hygiene, and quality standards.
- Assist in menu development, recipe costing, and seasonal product innovations.
- Monitor inventory, requisition raw materials, and minimize wastage.
- Maintain cleanliness, order, and efficiency within the pastry kitchen.
- Support the Head Pastry Chef in special/customized cake orders.
Required Skills:
- Strong expertise in baking, pastry, and cake decoration (including fondant, icing, chocolate, sugar work).
- Knowledge of modern pastry techniques and international trends.
- Team supervision and leadership skills.
- Attention to detail and ability to work under pressure.
Desired Skills:
- Experience in luxury/premium bakery setups.
- Knowledge of bakery cost control and recipe documentation.
