Brief:

As a Chef de Partie at GO DESi, you will be responsible for managing a specific section of the kitchen, preparing and cooking high-quality dishes to meet the restaurant’s standards. You will work under the guidance of the Sous Chef and Head Chef, ensuring food safety, hygiene, and efficient kitchen operations while training and supervising junior chefs or commis.

Job Responsibilities:

  • Assist in the daily preparation and production of all sweet items based on orders, adhering to established recipes, quality standards, and portion control optimized for delivery.
  • Execute mise-en-place tasks, including ingredient preparation, scaling, and organising, ensuring a swift and efficient workflow for fulfilling online orders.
  • Demonstrate proficiency in various cooking techniques relevant to sweet and pastry-making, with an understanding of how different techniques impact the final product's suitability for online delivery.
    • Quality & Consistency for Online Delivery:
  • Maintain a high standard of quality and consistency in all products prepared, ensuring taste, texture, and appearance to meet Go Desi's premium guidelines, even after transit.
  • Taste and evaluate food products to ensure they are of the highest quality before packaging for delivery.
  • Hygiene & Safety for Online Operations:
  • Adhere strictly to all food safety, hygiene, and sanitation standards as per FSSAI regulations and company policy, with extra attention to packaging hygiene for online orders.
  • Keep workstations, equipment, and packaging areas clean and always organized.
  • Manage stock rotation and inventory to minimize wastage and ensure the freshness of ingredients used for online orders.
    • Team Collaboration & Learning in an Online Context:
  • Work collaboratively with the NPD, Consultant Chef, and the packaging team to ensure a seamless process from recipe development to cooking to dispatch.
  • Be eager to learn about best practices for preparing and packaging food for online delivery to maintain quality during transit.
  • Communicate effectively with colleagues and supervisors regarding daily tasks, order volumes, and any challenges related to online order fulfilment.
    • Presentation & Packaging for Online Appeal:
  • Focus on the aesthetic presentation of all sweets intended to fulfill orders, ensuring they are visually appealing for potential online photography and maintain their form during delivery.
  • Assist in the proper packaging of sweets to prevent damage during transit, ensuring a positive unboxing experience for the customer.

Requirements:

  • A degree or diploma in Culinary Arts, Hospitality, or a related field is preferred, but not mandatory. Relevant on-the-job experience will also be highly valued.

Experience:

  • 1-2 years of experience as a Commis Chef or Junior Chef, preferably with a focus on pastry, desserts, or confectionery, with some understanding of the considerations for food delivery.
  • Proven experience in preparing Indian sweets, with a strong understanding of traditional Bengali sweets being a significant advantage.

  • Technical Skills:

  • Solid knowledge of cooking methods and techniques for Indian sweets and patisserie.

  • Basic knowledge of fusion dessert concepts and a keen interest in experimenting with new flavour combinations suitable for online consumption.
  • Understanding of food safety and hygiene protocols, with an awareness of packaging hygiene for delivery.

  • A strong passion for food and a creative mindset.
  • High attention to detail and a commitment to quality, with an understanding of how quality translates to the at-home experience.
  • Ability to work efficiently and calmly under pressure in a fast-paced environment driven by online order volumes.
  • A positive attitude and strong teamwork skills, with the ability to coordinate with packaging staff.
  • Punctuality and reliability are a must, especially for meeting dispatch deadlines for online orders.
