Job Purpose
To monitor, analyze, and control all food and beverage costs across outlets, ensuring profitability, compliance with budget, and accurate inventory management. The F&B Controller works closely with purchasing, stores, kitchen, and service teams to minimize wastage and maximize cost efficiency.
Key Responsibilities Cost Control & Analysis
- Monitor and control all F&B costs, ensuring alignment with budget and revenue forecasts.
- Analyze daily food and beverage costs and highlight discrepancies or variances.
- Prepare detailed cost reports and suggest areas for cost reduction or process improvement.
- Conduct yield and recipe costing for menu items, ensuring accurate pricing and profitability.
Inventory & Stock Management
- Coordinate and oversee monthly and spot stock counts for all F&B stores and outlets.
- Reconcile physical inventories with system records and investigate variances.
- Monitor par stock levels and support reordering processes.
- Ensure proper storage and inventory rotation (FIFO/LIFO).
Purchasing & Receiving Oversight
- Validate purchases and invoices to ensure correct pricing, quantity, and supplier terms.
- Cross-check supplier invoices with delivery notes and purchase orders.
- Ensure items are received and stored following hygiene and procurement standards.
Systems & Documentation
- Maintain accurate records in inventory and cost control systems (e.g., FMC, Material Control, MC, SAP, etc.).
- Set up and maintain updated recipe cards and standard portions with chefs.
- Support POS item programming and ensure pricing consistency.
Compliance & Coordination
- Ensure all activities comply with internal controls, company policy, and food safety standards.
- Liaise with department heads (Chef, Outlet Managers, Purchasing) on menu planning and cost strategy.
- Participate in audits and financial reviews.
Skills & Qualifications
- Strong understanding of F&B cost control principles and hospitality operations.
- Excellent Excel and financial reporting skills.
- Familiarity with POS and inventory systems (e.g., Micros, Oracle, FMC, SAP).
- Analytical mindset and attention to detail.
- Ability to work cross-functionally and communicate with non-finance departments.
- Strong organizational and time management skills.

Pay: ₹17,000.00 - ₹28,000.00 per month
