Looking for Executive Chef on a peoples oriented leading restaurant at Kannur. Only resturant industry worked candidates preffer (please excuse for Hotel Industry experience based candidates). Restaurant opening time 07:00 AM to 12:00 AM in midnight. Seating capacity - 105 nos with South Indian, North Indian, Chinese and Arabic Cuisines.
Key Job Profile and minimum responsibility are mentioned below;
He should be hands on experience in South Indian(Kerala Naadan) dishes & Chinese dishes mainly. North indian dishes knowledge is an added advantage.
1.Control/organise/arrange all kitchen staff, day to day kitchen activities and party order activities.
2. All staff daily duty roaster/leave plan to be make.
3. Conduct meeting with staff, Weekly/Monthly report to be submitted to Operation Manager/Management during Operation Meeting.
4. New dishes to be introduced as and when required. Food cost to be maintained, excess usage of items to find out and daily wastage to be control as and when required.
5. Daily kitchen closing stock/wastage/hygiene to be monitored. Food Safety standards to be implemented and monitor in all sections.
6. Food quality, taste and presentation to be in standards and ensure all sections are maintaining the requirements.
7. Daily/Weekly reports/Wastage report to be updated. Monthly kitchen stock co-ordinate to be assigned.
